THere is currently a 3.5E game going, looks close to finishing Red Hand of Doom, but not sure if Steve wants more players

I can accomodate an additional player. But really that should be a group decision, not just my choice, as extra players does mean a busier game which affects everyone.

As I did enquire some time back about Brittany wanting to join in one game with a little bit of coaching - it seems that there could be a way back for two games being played at the same time as you had many moons ago. Obviously when your current one has been completed.

That's certainly a possibility but does require a second GM, as good as I am I can't run two games simultaneously.

With these last few games can't people play as NPC,s just to get a feel of the play?

Most NPC's tend to be designed to stay in the background and not get heavily involved. The action after all is supposed to focus on the PC's. NPC's are there to make the situation feel more real and provide support/ or hindrance at important points.
While it's certainly possible for someone to actually play an NPC, it's not usually ideal. A lot of NPC's aren't designed to be played and therefore don't have the full stats that a normal player character would have (purely as they aren't supposed to get into the situations where they'd need them). Most of the NPC's in the Campaign I'm running (at least the ones on the players side) are also a lot less powerful than the PC's themselves which means they won't cope well with the kind of threats the PC's are facing. Also not good for a novice.
The Bad Guy NPC's are more of a possibility. If someone wants to run one of those as an when they crop up that would be interesting. Anyone doing that would probably need to accept a reasonable amount of prompting from me (as the GM) on what roughly they ought to be doing.
The other possibility of giving someone a taster of D&D 3.5 without having them design a full on character is that one of my players, the Noble Paladin/Kensi (think Samurai with a magic sword) being played by Edmund, currently has a companion who is a sentient Dire Lion known as Swift Claw. While this character is technically an NPC, Edmund is primarily running him as he's joined the group as a ally thanks to Edmund rescuing him from an evil Lich. So if someone fancies playing as an intelligent Lion, that's also an option.

Sounds good enough for Brittany she just wants to see the game in action and participate in a fringe capacity and this suits her to the ground. However, give her some coaching on the way so that she gets to understand the nuances of the game so that she is better prepared for your next one. Let me know when the next one is - Tuesday is a no no this week - but the next week is ok.
