In some ways it doesn't hugely matter which ships are selected if you are playing a small game, say 30 to 40 points, single ship on single ship. As the extra upgrades the cheaper ship allows room for will mostly balance things out.
For Imps I'd suggest that an Intercepter is a relatively good match up against the starter set X-Wing for a one on one game. The intercepter is more maneoverable and slightly quicker with boost, but more fragile. Firepower on both ships is about the same. The Tie Advanced would also be a reasonable choice. It's got less firepower, but comes with shields so more survivable.
For Skum the new Protectorate Starfighter (Fang Fighter) is quite similar to the Intercepter, so would be a decent match for an X-Wing. Plus the Kihraxz is a fairly close match to an X-Wing as well, so would work reasonably well vs either a X-Wing or the 2 Ties from the starter set.
I don't play Rebel stuff much, but pretty much any of the basic rebel ships ought to work fine. I.e. X-Wing, A-Wing, B-Wing, Y-Wing.
